Spring collection is sound like launching from fashion house but for us is all about food, I guess the recent article from ELLE gave me inspiration...

Is like boarding on the famous Eastern Oriental Express luxury rail traveling through the peninsula of the Malaysia via singapore to the bustling Bangkok the capital the kingdom of Siam........My imagination while writing our new spring menu taking our guest to explore the scenic of paddies field lies between the rural charming kampung village and rush rain forest along the journey ..........

My recent trip to Bali has given some tips how to perfect this exotic salad from the east with the golden                                         to fu and cracker work so well  like a crouton from the caesar salad





Singapore satay babi - pork satay grilled to perfect with the peanut satay sauce and mi goreng or in Indonesia they called Bahmi so they called it like that from Thailand. I guess one noodle can cook all the around Asia.






                                  Some like it with rice , some like it with roti what about you ?






                                                         Curry + Roti = Best Marriage




 Fluffy roti goes well with any curries from thai panang curry or Malay lamb curry we have it on our    spring menu


                                         
                                        why we all eat roti ?  do we all use the same recepe ?


                         Apparently not , according to my guru in Chiang Rai where i spend two days just perfect my roti skill in the muslim village with my lover sister . In thailand variation are quiet unique ! the fluffy roti we called in Malaysia roti canai and Singapore they called it roti prata ? in Thailand they just called it roti aroi ha ha !


Here you go now any roti crispy or fluffy we have it at on Kitima menu !





In the Northern Thailand they called it Lanna style grilled free range chicken sold on the street eaten with compliment with green mango somtam salad, In Malaysia we called it Ayam panggang marinated
more heavy on with coconut milk and also grilled over the charcoal flame ...


Tiga Rasa or three flavors sauce with crispy fish are commonly available in Northen Malaysia closed to the border of Thailand
                                                 

Nasi goreng seem like a national dish for all nation is South East Asia ..... they all called it fried rice with a sunny side up fried eggs with condiment served





                     Trio fish carpaccio Koh Samui or a Isaan Larb Seafood Spring roll in Siam







Or you can never go wrong with Tom Yum Goong in Thailand !
