Principle Consultant
As freelance consultant to relaunch Starwood Asia Pacific concept restaurant – Bamboo Chic, A Modern Cantonese and Japanese cuisine with an injection of European stylist dining overlooking the Saigon River. My focus area is to lead the team assigned on the engagement to deliver high-quality deliverables respecting deadlines. Train, mentor and teach team members improved processes. Maintain high quality level of reports and deliverables by establishing and enforcing organization standards. Optimize productivity given the available resources, identify business opportunities by bringing in prospects, Network with existing ideas and engage with potential clients to build the connection.

As freelance Asian cuisine consultant for the all day dining – East Station, focus all Asian dishes across the Orient. menu design & recipe development and product knowledge training. Involvement also including breakfast experience, in room dining, all day dining ,, Sunday Brunch and Banqueting.

My appointment as Executive chef was began after three months contract as consultant Chef in the beginning of 2013.
From May 2013 the transformation began with twice nominated by Eat out DSTV Award -The best Asian Restaurant Award and American Express Platinum Fine Dining Award and many prestige international recognition in 2015. Some amazing achievement accomplished in 2013 a very high standard five star pastry team was created to enhance the dessert standard to compliment the award winning cuisine.
August - December 2012 Heritage Telfair Spa and Golf Resort Bel Ombre . Mauritius Asian Specialist Consultant
Upgrade Pan Asian menu with global food trend influenced, Project included the introduction of Asian wellbeing cuisine for Spa and daily breakfast menu , uplifting team spirit with inspiration task and creative menu to increase covers and drive revenue and enhance guest experience with live seafood tank at open teppanyaki counter.
August 2011 - May 2012 Le Meridien Chiang Rai Hotel and Spa Resort Chiang Rai . Thailand Executive Chef
The hotel is consists of 159 suits with luxury spa resort with a banqueting facilities for capacity of 250 grand ballroom, 4 meeting rooms. Two traditional ceremonial sala, pool deck, riverside terrace, a fine dining Italian restaurants called Favola , International and Asian cuisine all day dining restaurant called Latest Recipe. Latitude 19 - serves fusion delicacies like Asian-styled Tapas.

Pan Asian Cuisine restaurant feature Chinese, Japanese, Thai, Vietnamese and Malaysian cuisine for a la carte served lunch and dinner. Hotel banqueting and exclusive outside catering service and Chef Kuan team building cooking class was a talk of the town among the chef’s Assistant to Director of Kitchen as council member of the Starwood Asia Pacific F&B concept.

Specialize in South East Asian Cuisine with banqueting facilities catering for exclusive parties and Asian tour groups. Traditional Chinese, Malaysian street food and the House signatures features 26 dishes Indonesia Rijstafel as house specialities.
April 1989 - November 1992 Sea Palace Indonesia Restaurant Amsterdam . The Netherlands Personal Chef
Responsible to prepare lunch and dinner for 160 staffs members on the floating restaurant. Daily stock control , maintain the cleanliness in the storeroom and receiving area. Assist chef for banqueting and a la carte restaurant during peak season in summer season.
March 1988 - March 1989 The Bankers Club @ Amonda Kuala Lumpur. Malaysia Captain for Chinese Dining Room
Head for 100 seat luxury fine Chinese dining room at the prestige private club. The restaurant “Tang Room” was named “ Best Chinese dining in Kuala Lumpur” by head quarter in USA. Responsibilities also included five exclusive private dining rooms with impeccable service by butler.
